Slow cooked beef cheeks in a rich red wine sauce served with creamy butter mashed potato and crispy pancetta

Ballotine of chicken

Chicken breast stuffed with cranberry and pistachio wrapped in Parma ham, served

with a crispy chicken and chestnut bonbon and a tarragon jus

Mushroom and stilton wellington (V)

Juicy mushrooms on a layer of creamy stilton, wrapped in flaky pastry finished

with a port and red currant jus

Venison with quince and chestnuts

Slow cooked venison in a rich winter spiced sauce, served with earthy chestnuts,

caramelised quince and celeriac purée
