Chopped BLT Salad with Lime Vinaigrette

I'm going to conservatively state that this salad is a sensation.

I'm not even exaggerating. It's smack-bam-whallop, snap-crackle-pop, OH-MY-GOD awesome. So many flavours. So many textures. SO MUCH FUN in a humble bowl. I swear salads have never been so exciting. And the bonus is it's also super good for you. You're eating a bowl of vegetables with a jolly little helping of bacon. Can salad life get any better? (No.)
This salad uses all the flavours that your tongue needs to be happy. Summery sweetness comes from the plump cherry tomatoes and sweetcorn. The vinaigrette is sharp and tangy with hints of delicious limey citrus. The bacon is wonderfully smokey in the background, not taking away from the vibrant and fresh flavours but just adding it's bacony goodness. I mean c'mon, are you dribbling yet? I am.
This salad is for summer. The easiest thing to whip up on a moments notice and can serve as both a side salad and a main dish. In about 10 minutes you'll be settling down on the grass with a bowl of this a bottle of white of ice. Enjoying the sun, enjoying time outside of the kitchen and enjoying the party going on in your mouth. It's a game changer.
And as if I even need to sell you on the BLT combo. Let's just get creating. 

For Chopped BLT Salad with Lime Vinaigrette (serves 2-3 for dinner):

Splash olive oil
6 rashers smoked bacon
1 avocado
2 little gem lettuces
160g sweetcorn
100g feta cheese
12 cherry tomatoes

Lime Vinaigrette:
2-3 tbsp olive oil
2-3 tbsp white wine vinegar
1 lime, juice and zest
3 tsp sugar

Begin by heating a frying pan with a splash of olive oil. Then chop up and fry the bacon until crisp. Once crisp, transfer to a paper towel to blot. 


Now chop up the avocado and lettuce and add it to a large bowl along with the sweetcorn. Then slice the tomatoes in half and chuck them in along with the feta, crumbled. Set aside.


Make the vinaigrette by adding the oil, vinegar and lime juice to a jug.  


Add in the lime zest and sugar.


Mix up! Taste to see if it needs a touch more sugar. 


Add the blotted bacon to the bowl of salad and then pour over the vinaigrette. 


Stir!


And serve! As I said, chilled wine is also recommended.
