Carrot and Chickpea Wraps

At this time of the year I find it hard to feed myself. Ridiculous words coming from a food blogger, I know. But when it gets to December I feel like we should all be living off a consistent diet of mince pies and chestnut stuffing. In reality, this doesn't really work out and I'm left at a loose end of what to munch on. This is big problem for me as 1. I need to eat and 2. as a student December to January is a crucial time to stay nourished. There are essays, exams and all other sorts of delights to deal with. Happily, these wraps are easy to transport to the library and will sit in the bottom of your rucksack. They are lifesavers, fo' real. This recipe has actually been in the works for a while and I'm so happy to finally bring it to the blog. I tried it out myself a few times and couldn't get it quite right. J decided to persevere with the recipe though and came up with these perfect little beauties. I'm happy to be showcasing J's first recipe on the blog. It's definitely a keeper. They are also super speedy and cheap as chips to make. Winner winner chickpea dinner.
Shall we get down to it? We've got deadlines to meet after all. 

For Carrot and Chickpea Wraps (to make 2 large wraps or 4 small ones):
3 medium carrots
1 can chickpeas
1 red chilli
1/2 tbsp honey
1 tsp paprika
1 tsp mixed herbs
1/2 tsp ground coriander
2 tbsp hummus
2 tbsp natural yoghurt
2 large wraps
Salt and pepper

Begin by peeling and grating your carrots.


Heat a pan with a little oil then tip the carrots in. 


Drizzle in the honey.


Slice up the chilli and chuck it in.
If you don't want it too hot then remove the seeds. 


Chuck in the chickpeas


Add paprika, herbs and ground coriander into the mix. Stir through and keep on the heat for five minutes until warmed through.


Dollop on a tablespoon of hummus onto each wrap and spread over the base.


 Split the chickpea mix between each wrap and line up just off centre.


Add on your yoghurt.


 Then carefully roll up


Add on a little hummus to stick the wrap together.


Fold in the end and then slice in half.


Looking super and distinctly un-mince pie-ish. 
December diet = sorted.


All wrapped up and ready to roll. Handily fitting into a library lunchbox!
