Popeye Salad

Today's salad is another hand-me-down from my Mum. She's been making this one for ages and I love it. You'll love it too cause it's oh so tasty and ever so healthy. She doesn't call it Popeye salad, but I've decided to because I live on the salady edge, and it's packed with spinach that will make you 'strong to the finich'. Aah Popeye.


For Popeye Salad you will need:
5 Handfuls of baby spinach
4 Rashers of unsmoked bacon
1 small red onion

For the dressing:
4 Tablespoons olive oil
2 Tablespoons balsamic vinegar
1 Tablespoon honey
Salt and pepper


Begin by cooking the bacon. If you have a grill, do it on there but if not, fry the bacon and make sure to drain off the fat.

Now slice your onion very finely. Make sure the slices are thin or the onion overpowers the rest of the salad and you have to carry around at least 5 packets of mints for the rest of the day.
 

Beware readers, onions are evil little root vegetables. Mine made me cry. Ass.


Rinse your spinach and put into a serving bowl.


 Then add your onions.


If you're like me and you don't care for bacon fat pull it off now. Then slice the bacon up into bitesize bits. Don't worry about being too precise, rip into rustic shapes.


Add the bacon into the salad and toss together until all mixed.


Now to make the dressing. This is so easy and will take you about a minute. Begin by adding the 4 tablespoons of olive oil into a jug.


Now add in the two tablespoons of balsamic vinegar. Doesn't it look cool. 


Drizzle in the honey, crack in some black pepper and salt and mix up vigorously. 


Pour the dressing all over the salad.


Toss through the salad with a fork and a spoon. No getting our hands stuck in today. Sorry.
